Lemon Balm
Lemon Balm, also known as Melissa, is used primarily in the coloring of absinthe. It can also be used in the macerate. Melissa officinalis contains a lemon scented oil that has anti-viral activity. Our melissa is harvested just as the flowering begins. At that time we harvest it all, making way for fresh growth.
Paracelsus (1493 - 1541) called it "the elixir of life" and John Evelyn (1620 -1706) described it as "sovereign for the brain, strengthening the memory, and powerfully chasing away melancholy".
