Genepi

Genepi is probably the rarest of all of the herbs used in absinthe.  Difficult to find in the Alpine regions of its homeland, it has been hunted nearly to extinction and is considered impossible to grow commercially.  Here in the Appalachian Mountains we have been able to grow a high quality Genepi.  There is a limited supply, as Genepi is a small and delicate plant flowering only once in the springtime.
